Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 10 ounces frozen chopped spinach, thawed and squeezed dry
  • Salt and pepper to taste
  • 2 teaspoons hot sauce (optional)
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup Parmesan cheese, shredded
  • 1 egg, beaten
  • 1 cup small-curd cottage cheese
  • 14 sheets phyllo dough, thawed
  • 3 tablespoons melted butter
  • 3 tablespoons olive oil

Steps
    1. Preheat oven to 375°F (190°C).
    2. In a skillet, heat 1 tablespoon each of butter and olive oil over medium heat. Sauté chopped onion until translucent, about 4 minutes. Add minced garlic and cook for an additional 2 minutes until fragrant.
    3. In a large bowl, combine the sautéed onions and garlic with thawed spinach, salt, pepper, hot sauce (if using), beaten egg, feta cheese, Parmesan cheese, and cottage cheese. Mix well to incorporate all ingredients.
    4. In a separate bowl, mix the remaining melted butter and olive oil.
    5. Lightly grease a 9×13-inch (23×33 cm) baking dish. Place one sheet of phyllo dough in the dish and brush with the butter-oil mixture. Repeat layering and brushing with 6 more sheets of phyllo.
    6. Evenly spread the spinach mixture over the layered phyllo.
    7. Continue layering the remaining phyllo sheets on top of the spinach mixture, brushing each sheet with the butter-oil mixture. Ensure the top layer is well-buttered.
    8. Bake in the preheated oven for about 45 minutes, or until the top is golden brown.
    9. Allow to cool slightly before cutting into bite-sized squares.
